Ingredients
  

  • 1 cup dried chickpeas (soaked overnight)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • ½ teaspoon garlic powder (optional)
  • Zest of 1 lemon (optional for extra flavor)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Drain and pat the soaked chickpeas dry with a towel.
  • In a large bowl, toss the chickpeas with olive oil, cumin, paprika, salt, cayenne pepper, and garlic powder (if using).
  • Spread the chickpeas in a single layer on a baking sheet.
  • Roast for 30-40 minutes, stirring once halfway through to ensure even crisping.
  • Remove from the oven when golden and crispy. Let cool before serving.
  • Optional: Sprinkle with lemon zest before serving for an added layer of freshness.
