Lupin Falafels Recipe

Ingredients
  

  • 1 cup dry lupin beans
  • ½ cup fresh parsley
  • 3 cloves garlic
  • 1 small onion
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • ½ tsp baking soda
  • 1 tbsp lemon juice
  • 2 tbsp ground flaxseeds
  • Salt & black pepper to taste
  • Cooking oil spray

Instructions
 

  • Prepare Lupin Beans: If using dry lupin beans, soak them overnight, drain, and rinse. If using canned, simply drain and rinse.
  • Blend Ingredients: In a food processor, combine lupin beans, parsley, garlic, onion, spices, baking soda, lemon juice, and flaxseeds. Pulse until the mixture is coarse but holds together.
  • Shape Falafels: Scoop small portions and form them into balls or patties.
  • Cooking Options:Air Fryer: Preheat to 375°F (190°C). Place falafels in a single layer, spray with oil, and cook for 12-15 minutes, shaking the basket halfway.Baking: Preheat oven to 400°F (200°C). Place falafels on a lined baking sheet, spray with oil, and bake for 20-25 minutes, flipping halfway.Frying: Heat oil in a pan over medium heat. Fry falafels until golden brown, about 3-4 minutes per side.
  • Serve & Enjoy: Pair with tahini sauce, hummus, or a fresh salad.
